What is Chlorophyllin?

Chlorophyllin is a semi-synthetic mixture of water-soluble sodium copper salts derived from chlorophyll, the pigment that gives plants their green colour. The center magnesium atom is replaced with copper, and the phytol tail is lost. In contrast to chlorophyll, this mixture is water-soluble.
